Friday night was my annual Christmas card stamp-a-stack. I fixed Christmas Tea on the stove to have the smell of Christmas hanging in the air and Christmas music playing to get us in the mood. Now the Christmas Tea is not something you drink! It’s made with the peels of a lemon and orange, a cinnamon stick and a good shake of whole cloves. Add water and let it simmer on the stove. I also had cheese and crackers, a dip and chips and Pumpkin Chocolate Chip Mini Muffins.
     Here is the recipe for the muffins. I was introduced to these by my next door neighbor. Fix these and I guarantee you’ll make friends.

Pumpkin Chocolate Chip Muffins
Serves: 30
Wonderful and great for the holidays!

Yield: 30 muffins
Prep Time: 15 min
Cook Time: 16-20

Ingredients:
4 wholes    eggs
2 cups    sugar
1 can    16 ounces pumpkin
1 teaspoon    vanilla extract
1-1/4 cup    Coconut Oil
3 cups    flour
2 teaspoons    baking soda
2 teaspoons    baking powder
2 teaspoons    cinnamon
1 teaspoon    salt
12 ounces    semisweet chocolate chips

Directions:
Mix together eggs, sugar, pumpkin, vanilla and oil until smooth. Sift dry ingredients and mix into pumpkin mixture. Fold in chocolate chips.
Fill muffin cups 3/4 full.
Bake at 400° for 16-20 minutes.

For mini muffins bake for 8-10 minutes. Makes 6 dozen mini muffins.

CHRISTMAS CARD STAMP-A-STACK

CARD STOCK: Whisper White (100730 $8.50)
                Night of Navy (100867 $7)

INK: VersaMark (102283 $7.50)

ACCESSORIES: Heat Tool (129053 $30)
            White Embossing Powder (109132 $5)
            Embossing Buddy (103083 $6)
            Curvy Corner Trio Punch (139683 $20)
            1/8” Silver Ribbon 15” (132137 $5)
            5 Dimensionals (104430 $4)
            Post It Tape
          
DIRCTIONS:
Using Embossing Buddy, wipe over entire front of Night of Navy card stock.
Use a post it strip to cover verse at the bottom of dove stamp. Use VersaMark ink to ink dove. REMOVE POST IT STRIP! Stamp dove on upper portion of CS. Stamp sentiment on bottom of card.
Sprinkle White Embossing Powder over stamped images and use heat tool to emboss image.
Tie ribbon around card as shown making a bow. Trim ends.
Punch edges of CS with Trio Punch.
Place dimensionals on each corner and 1 in the middle.

TECHNIQUES:
Heat Embossing-wave heat tool back in forth over all images until melted.

TIPS:
Tilt card at light to make sure all embossing powder is melted.
Punch one edge of card, flip  card over and punch next corner. Repeat.
Tie bow (BEFORE adhering to base) upside down so “legs” will hang the right way.
If making multiple cards, do them assembly line style. I stamped the dove on 5 cards, then the greeting and next the heat tool. Repeat til you are through.

     I was thinking tonight–that dove would be beautiful in Rich Razzleberry!
