I hope you have had a wonderful Christmas/New Year break. Although this year and holiday season have been VERY different, our family did what everyone did and muddled through.
Rod and I spent a quiet Christmas eve watching Netflix, Amazon, and a little Hulu mixed in enjoying being together. For Christmas day, Rod grilled steaks and asparagus (yum) and I did my oven baked potatoes! The “recipe” came from a coworker when I was teaching. After washing your potatoes, coat with olive oil and chunky sea salt. Wrap in foil and bake at 400 ° for 2 hours! Try it! They are the best and it also works for sweet potatoes.
During the days in between, I started working on my BOGO sale–stay tuned details will follow! But I also found time to make sugar free (or as sugar free as possible) Brownies and Dishpan Cookies. Even Ziggy got in on the cookie making! I made her some gluten free Pumpkin Peanut Cookies.
Then came New Year’s. We took Ziggy-the grand-pup, to the dog park before the torrential rains began. New Year’s day was beautiful. We toasted in the new year not on New Year’s Eve (due to the fact that I was asleep at 10:30) but all the following day.
I had a very productive day and even did an online Refit dance class last night!
